Orange Lemon Refrigerator Cake

Just wanna share this delicious cake recipe. It's easy though byk steps kena buat like the filling and the topping. All in all, the taste is great (as if u put cheese inside). Th sour taste from the orange and lemon juice. If u're bored with typical chocolate cake, try this one!

-1 cup plus 2 tablespoons all purpose flour
-1 cup granulated sugar
-2 tsps baking powder
-3/4 tsp salt
-1/2 cup cold water
-1/3 cup vegetable oil
-3 egg yolks
-2/3 cup egg whites
-1/2 tsp cream of tartar
Orange Lemon Filling*
1 cup whipping(heavy) cream
1/4 cup powdered sugar (icing sugar)
Methods:
1. Heat oven to 350 F. Mix flour,granulated sugar, baking powder and salt. Stir in water, oil and egg yolks until smooth. Beat egg whites and cream of tartar in large bowl until stiff peaks form. Pour egg yolk mixture gradually over egg whites, folding just until mixture is blended. Pour into 2 ungreased round pans, 8 or 9x1 1/2 inches
2. Bake 25 to 30 minutes or until top springs back when touched lightly in center. Invert pans immediately with edges on inverted custard cups until layers are completely cool* Loosen edges from pans with spatula. Turn pans over;hit edges sharply to loosen completely. Remove cake from pans. Prepare Orange-Lemon Filling.(* i just waited until the cake cool completely then i removed frm the pan)
3.Split layers horizontally in half*. (* I didnt split the cake -meaning it will be 4 layers. Cantik but i'm too lazy to split the cake. A tedious job for me . Instead of 4 layers, mine was 2. Still cantik and sedap, trust me)
4.Divide 1/2 cup filling between layers; frost side and top with remaining filling. Wrap in palstic wrap or aluminium foil, inserting toothpicks in cake to hold plastic wrap or foil away from filling. Refrigerate at least 12 hours.
5. Just before serving, beat whipping cream and powdered sugar in chilled bowl until stiff; frost cake. Garnish with grated orange and lemon peel if desired. Refrigerate any remaining cake.
*Orange-Lemon Filling
Ingredients:
1/2 cup sugar
3 tbsps cornstarch
1/8 tsp sald
1 cup orange juice
1/2 cup water
2 egg yolks, slightly beaten
2 tbsps lemon juice
1 tbsp grated orange peel
1 tbsp margerine or butter
Methods:
1. Mix sugar, cornstarch and salt in saucepan. Stir in orange juice and water gradually. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir 1 minute.
2. Stir at least half of the mixture slowly into the egg yolks. Blend egg yolk mixture into hot mixture in saucepan
3.Boil 1 minute, stirring constantly; remove from heat. Stir in lemon juice, orange peel and margerine. Refrigerate abt 1 hour or until filling is set. Gently stir to soften., if necessary, before using |
